Canadian Rail Trip Redux

My sister, Julie, and I have pretty well decided that we will, indeed, take a transcontinental rail trip in September. We plan to take Amtrak from Albany, NY, to Seattle and then VIA Rail from Vancouver to Montreal. We are getting together this weekend to plan the trip and reserve the major rail pieces.
We are looking at reserving the 2-person roomettes on Amtrak and double berths on VIA Rail. I would like to hear from anyone who has taken either or both of these trips as to whether this makes sense, or should we upgrade to a bedroom? There is also a major "unknown" at this point. As some of you may know, Julie is on the short list to receive a guide dog, which may or may not arrive before our trip. If she does have the dog, she will obviously want to bring it with us. So, could a dog sleep on the floor under the lower berth, or even on the berth with Julie for that matter? Or would it be necessary to have a bedroom? Obviously we will be talking with both Amtrak and VIA Rail about this, but I would value the thoughts of anyone who has taken these trains.
We will probably spend two or three days in Seattle and then go on to Vancouver. Does it make sense to rent a car or is there other transportation that will suffice? We would also like to visit Vancouver Island. How much time do we need to devote to the city and the island?
I`d greatly appreciate any input anyone might have on all this.
