Currency Exchange Options?

Happy New Year to all.
We have a trip planned to Italy in May, and we assume the dollar will only get worse against the euro between now and then.
We have deposits on the four apartments we will be using. We`re considering paying in full for them now, rather than later.
What is the best way to convert dollars to euros now in the states? Find a bank that will do it? Or is there a better way? Most US banks just look at you funny when you ask to exchange currency. The downside, of course, if we do this, is then carrying cash around Italy, notorious for its pickpockets.
Thanks for the advice.
