Spain trip: Barcelona, Madrid and Andalucia

Some time ago I asked about the value of guidebooks for restaurant recommendations. Most said that the personal touch was best. So I am asking you!
Barcelona - 2 nights (hotel near Placa Catalunya)
Madrid - 5 nights - day trip to Toledo (hotel near Heurtas/Barrio de las Letras)
Cordoba - 2 nights (hotel near the Mezquita / cathedral)
Seville - 3 nights (hotel in Santa Cruz near Santa Cruz church)
Granada - 2 nights (hotel near the cathedral)
Ronda - 5 nights (hotel in Ronda - we plan to do day walks)
Malaga - 1 night before our flight home (hotel near the contemporary art centre)
We have been to Barcelona before but it was gosh, 30 years ago! As you saw above, our hotels are mostly in the historic centres of the cities. We will be travelling by train and bus (two trains already booked on Renfe with 60 percent web fare discount) and we have booked the Alhambra.
Any suggestions about must see`s or must eat`s? We are interested in budget but authentic food. We would like a worth-it slurge or two though. We prefer fish and seafood to weird bits of animal! We know that eating hours are problematic and think we will try to take advantage of daily menus at "lunch" time (2-4 pm!) and have tapas for dinner. I am concerned about breakfasts since I like to have something nutritious at that time. Suggestions? And I want my coffee!
I have not spent any time in Spain other than our week in Barcelona way back in 1974, so we are really looking forward to it. And to reading your comments and suggestions!
We will be travelling in mid-October and the first week of November - 3 glorious weeks. Fingers crossed that we will be able to extend this year`s almost non-existent summer!
