Which are the popular local food items in Pahalgam?

The local cuisine of Pahalgam mostly comprises of traditional dishes in which the main ingredient is rice which is always either cooked with chicken, mutton, chicken or fish cooked with vegetables.
The mutton and vegetables are cooked in various style with a blend of spices which is completely mouth watering. The main dishes are Rogan Josh which is lamb marinated with yogurt and almonds and then this is slowly braised with green and black cardamom, clove and peppercorn and meatballs, which is known as Gustabha, These are the two main dishes of Pahalgam.
Banquet of Kashmiri cuisine: The most well known dish of Pahalgam is the Wazwan which is a complete meal in itself. Wazwan is a multi-course meal, and you get a choice of at least 15-30 courses, which is traditionally shared from large metal plate, known as the trami. The tramis are brought all laden up with rice, and served with seekh kababs, tabak maaz, methi korma, safed murg and the zafrani murg. Alongside these dishes yogurt and chutney are served separately in small earthen pots. Amongst the common dishes served in a trami, the Tabakh maaz, rista, rogan josh, daniwal korma, aab gosht, marchwangan korma and Gushtaba are generally visible in a trami. A lot more of preparation goes into preparing a Wazwan. The head chef known as the Waza personally supervises each dish.
